Well, we have the place all to ourselves now!

When we arrived at this location on Tuesday, there was one other RV already in the area that we could see. We passed by them and found a spot further out. The next day, they left for several hours and returned, this time heading beyond us and closer to the base of the mountains. he pulled out Friday morning and now we have the place to ourselves. Let’s just say, those people have an amazing rig. We tried to look up what it was, but it looks like it’s some custom RV from Bliss Mobil and Acela. Isn’t it cool?

Since March 17, we’ve only gone out twice to re-supply. I am incredibly thankful for our current location as I am able to wash and line-dry a small batch of clothes every now and then. Finding laundromats that are open is even more difficult than usual and One of the things we plan on getting as soon as we get to West Yellowstone is a portable washer. Washing clothes by hand is not only very time consuming, but not as efficient with water. With space at a premium in our RV, we would probably store and use it in our shower and just pull it out when we use the shower. If you haven’t seen it already, check out our friend, Patrick’s video…he reviews the unit we’re thinking of getting.

In my last post, I mentioned there were gophers in the area. The weather has been absolutely gorgeous so today I just sat outside with my camera (Canon Rebel T7i) and waited to see if any gophers would appear. After about 20 minutes, I saw these two:

They are in the lower, center portion in the first photo – see them? Photo #2 is a close-up.

After I had a conversation with them about the importance of social distancing, they behaved a little better…

For more than a year, we used to do livestreams on YouTube every Friday and Sunday. At the beginning of March, we stopped doing them. First it was our son’s wedding, and then the pandemic hit. With our need to boondock, our internet is just not that reliable to continue that schedule. However, we’ve had a lot of people concerned about us and this location has very good Verizon connectivity, so we did a livestream on Facebook and have to say, it was nice to catch up with so many people! Although, I didn’t plan on us having to move around to avoid the wind/sun and people got a glimpse of our laundry – what a view!

Is it just us, or does everyone eat through all the good food and snacks right after they go shopping? We went through all of the quick and easy foods (as well as the Moosetracks ice cream) so now I have to get creative if we want a treat. Last night, I made – for the first time ever – a spinach artichoke dip. It was so good!! If you are looking for a super-easy treat to make, this is it. We ate it so fast, I forgot to get a good picture after I took it out of the oven, but here’s a peek:

8 oz. cream cheese, softened
1/4 cup sour cream
1/4 cup mayonnaise
1 garlic clove, minced (1 tsp)
2/3 cup shredded Parmesan cheese
1/2 cup shredded mozzarella cheese
Pepper, to taste
1 (14 oz) can quartered artichoke hearts, can liquid drained, squeeze artichokes to drain excess liquid, chopped
6 oz. frozen spinach, thawed, squeezed to drain excess liquid

1. Preheat oven to 350 degrees. Spray a baking dish with non-stick cooking spray.
2. In a mixing bowl stir together cream cheese, sour cream, mayonnaise, garlic, parmesan, mozzarella and pepper.
3. Stir in artichokes and spinach
4. Spread mixture evenly into prepared baking dish. Bake in preheated oven until heated
through and the cheese is melted – should be about 20 minutes.

That’s all for today. Temperatures are supposed to be dropping into the 20’s this evening, so we’re going to make sure we close up everything and get settled in for the night. By the way, if you know any good books to recommend, send them our way – i’m looking for my next read!

  1. I’ve been enjoying your posts and love the pictures that you’ve included with this one. The gophers are so cute. So glad you found such an awesome campsite and the rig that you spotted is interesting… huge ground clearance on it. Thanks for the recipe… next visit to the grocery store I hope I can find the ingredients… not sure since the frozen vegetable case was decimated on my last visit. We’ve been thinking about spinach artichoke dip… you must have read our minds.
