The Miracle Biscuit

A good biscuit recipe is something everyone should have. Buttery, flaky and warm served with a bit of honey or butter is my favorite. Serve it along with your favorite stew on a chilly day and everyone is content. It took four tries, but a winner finally emerged in our friends Stacey and Chris’s search for the best biscuit recipe…with some miraculous results.

Stacey’s husband, Chris has been undergoing cancer treatment and has had a lot of ups and downs over the last year. For Chris’s birthday all he asked from Stacey was a good homemade biscuit. Stacey text me and said “now, I’m 65 and can’t bake and flour somehow turns to drywall material in my hands, but I told him I got it.”

Stacey did what most of us would do and googled “best biscuit recipe” and thought it would be easy. I eagerly waited for her results (as did Chris)….hockey pucks. Her words, not mine! Chris had a good laugh and gave her an “A” for effort but was determined to find a recipe and decided that HE would make them.

With Chris at the helm, the search for the best biscuit was well underway. They found an Aussie YouTuber claiming that with only 3 ingredients you could make a great biscuit! Survey says…. good, but nothing to write home about.

Third time’s the charm (or biscuit)?

Back to google and another try, Chris still leading the search. Stacey has been banned from handling the flour. Researching tips found online, they bought a new pastry cutter, cut down on the handling/over kneading the dough and decided to try to cook the biscuits in an iron skillet. Result? Seeing improvement but to Chris’s discerning pallet, they weren’t quite there.

Winner, winner, chicken & biscuit dinner

At this point, I have been waiting by my phone for updates like I was waiting for the release of each new Game of Thrones episode each week. Finally, Stacy sent me an update that they took a bit of one recipe and a bit of another (isn’t that how the best ones always come about?) to make “THE best biscuit”. Her exact words were “Tastes so good I wanna slap ma’self” and graciously shared the recipe with me (see below) along with the tip to always make sure to use fresh baking powder and not the one that has been sitting in the cupboard for…well we won’t say how long!

She described the biscuit as somewhat scone-like and dense enough that you could add ham bits and cheese to make it more like a breakfast biscuit. But the best part was yet to come.

The Biscuit Miracle

As I mentioned before, Chris has had a tough time of it lately. He was scheduled for some follow up tests later that week to see if his recent round of treatments have been successful and we were all a bit nervous. The Great Biscuit Bakeoff of 2020 took our minds off it for just a bit and we were grateful. We were even more grateful to find out his scan results all came back stable! We’re convinced it was the biscuits and no one can convince us otherwise…..

The Miracle Biscuit

The Great Biscuit Bakeoff of 2020 is complete and we have a winner!
Course Breakfast, Dinner, Side Dish, Soup

Ingredients
  

  • 1 stick butter cold
  • 2 1/2 cup flour
  • 1 cup buttermilk
  • 2 tbsp baking powder
  • 1 tbsp sugar

Instructions
 

  • Preheat oven to 450 degrees
  • Mix all ingredients together (reserve 1 tbsp of buttermilk for later)
  • Fold 3 times
  • Roll out with a rolling pin to get uniform thickness
  • Cut to desired shape and place on a non-stick cookie sheet
  • Brush top of dough with buttermilk
  • Bake at 450 degrees for 17 minutes
